Red Velvet Cake

This is a Tupperware recipe.  It was the first time I had every eaten or made red velvet cake.  I must say it was absolutely delicious and the kids loved the bright red colour.  I love baking with the Stack Cooker when I am baking with the kids because you just make your cake, pour it in the stack cooker and microwave for a few minutes.  No pre-heating the oven, greasing and flouring the pan, baking for 30 min or more and all that jive.  And the Tupperware Stack Cooker is so easy to clean, simply throw it in the dishwasher and walk away!  Not only is it easier to make and clean, but you will save so much power by only using the microwave for 10 minutes compared to using the oven for 45 min!!

I filled it and covered it with store bought cream cheese Icing and crumbled Cadbury Flake bars.  yum!

2 ½ cups flour
1 ½ cup sugar
1 tsp. baking soda
1 tsp. salt
2 tbsp. cocoa powder
1 ½ cups vegetable oil
1 cup buttermilk
2 eggs
2 tbsp. red food coloring
1 tsp. white distilled vinegar
1 tsp. vanilla

In a Wonderlier® 8 ¾-cup/2.1 L Bowl, combine the flour, sugar, baking soda, salt and cocoa powder.  In a Wonderlier® 12-cup/2.8 L Bowl, beat together the oil, buttermilk, eggs, food coloring, vinegar and vanilla.  Add dry ingredients to the wet and mix until smooth and combined.  Pour batter into TupperWave® Stack Cooker 3-Qt./ 3.0 L Casserole with Cone that has been sprayed or greased with cooking oil.  Microwave on high power for 10–11 minutes until no center tests clean with a tooth pick.
